If made with sauce, I would recommend the sauce is poured on top of the meatballs just before serving as opposed to putting the meatbals in the sauce and cooking for a bit, as they tend to fall apart.Will make again, but experiment a bit with the food processor blending time.

These were delicious!I didn’t have any vegan parm on hand so I substituted nutritional yeast and used all fresh basil.Food processor decided to die so I mixed/mashed all ingredients in a large bowl with a fork and they still turned out great!I paired these with vegan tuscan pasta……YUM!!!!.I think the main thing was having all the ingredients chilled in the fridge before hand, maybe this is unique to olive and canola oil? I’m very happy with the end results though!.Maybe more chickpeas? Maybe firm tofu? I can't guarantee how it would turn out with either of those though as I've only tried it with cashews.
